This popcorn cake that Amanda's mother makes is a household favorite.
She makes it the same way you make Rice Krispie squares, just with popcorn and mixes in some gluten free gummy bears and other gluten free candies.
Ingredients
50 ml or 1/4 cup margarine or butter
1.25 L or 5 cups miniature or 40 regular (250 g pkg) marshmallows
2 ml or 1/2 tsp vanilla extract (optional)
1.5 L or 6 cups of popped Popcorn
1/2 cup of gluten free gummy bears
1/2 cup of nerds or other gluten free candy
Directions
In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
Stir in vanilla. add popcorn. Stir until well coated.
Using buttered spatula, press into a lined Bundt tin with parchment. Gently press down to mold and let cool. Flip and peel off parchment.
